Sweet Hawaiian Crockpot Chicken

Ingredients
  

Main Ingredients

  • 2 lbs chicken breasts boneless, skinless
  • 1 can (20 oz) crushed pineapple with juice
  • 1/2 cup soy sauce low sodium preferred
  • 1/3 cup brown sugar light or dark
  • 3 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 2 green bell peppers chopped
  • 1 onion diced, yellow or sweet
  • 1 tsp sesame oil optional, for flavor

To Thicken Sauce

  • 2 tbsp cornstarch
  • 2 tbsp water to mix with cornstarch

Instructions
 

  • Place chicken breasts in the bottom of your slow cooker.
  • In a bowl, mix crushed pineapple with juice, soy sauce, brown sugar, garlic, ginger, and sesame oil.
  • Pour the mixture over the chicken. Add chopped bell peppers and diced onion on top.
  • Cover and cook on LOW for 6–7 hours or on HIGH for 3–4 hours, until the chicken is fully cooked and tender.
  • Shred the chicken using two forks directly in the crockpot.
  • In a small bowl, whisk together cornstarch and water. Stir into the crockpot and cook on HIGH for an additional 10 minutes until the sauce thickens.
  • Taste and adjust seasoning if needed. Serve hot over rice, in sliders, or with veggies.

Notes

This recipe can be prepped in advance and frozen (combine all ingredients in a freezer bag and thaw before cooking). Delicious with rice, cauliflower rice, or on Hawaiian rolls as sliders. For extra flavor, add a splash of sriracha or red pepper flakes.
