  • 1 box 15.25 oz strawberry cake mix
  • 2 large eggs
  • cup vegetable oil
  • 1 tsp vanilla extract
  • ½ cup powdered sugar (for rolling) Extra for rolling can be included.

Optional Enhancements

  • pink food coloring For enhanced color.

Preparation

  • Combine cake mix, eggs, oil, and vanilla in a large bowl until a smooth dough forms. Add food coloring if desired.
  • Refrigerate dough for 20-30 minutes to help the cookies hold their shape.
  • Preheat oven to 350°F and line baking sheets with parchment paper.

Baking

  • Roll dough into 1-inch balls and coat each thoroughly in powdered sugar.
  • Space the dough balls 2 inches apart on the baking sheet and bake for 10-12 minutes, until tops develop cracks.
  • Let rest for 5 minutes on the pan, then transfer cookies to wire racks to cool.

Notes

For best results, use the double sugar coating method. Roll dough balls in granulated sugar first, then powdered sugar.
