Instructions
 

Preparation

  • Whisk eggs and sugar until pale and frothy.
  • Mix in vanilla and lemon zest (if using).
  • Sift flour, baking powder, and salt into the wet mix and gently fold without overmixing.
  • Stir in melted butter and heavy cream until well combined.
  • Chill the batter for 1 hour.

Baking

  • Preheat oven to 375°F (190°C).
  • Grease and flour a madeleine mold.
  • Fill each mold about 3/4 full with the batter.
  • Bake until golden with the signature hump, about 10-12 minutes.
  • Cool before serving.

Notes

Serve on a cake stand, optional toppings include powdered sugar or chocolate dipping.
