  • 4 large large eggs, room temperature Important for whipping
  • 1 cup full-fat cottage cheese Do not use low-fat
  • ¼ teaspoon cream of tartar Stabilizes egg whites
  • ½ teaspoon baking powder
  • Pinch salt Add more for flavor
  • ¼ teaspoon garlic powder Optional for savory version
  • 1 tablespoon honey Optional for sweet version

Instructions
 

Preparation

  • Separate the eggs carefully, placing whites in a clean, dry bowl.
  • Add the cream of tartar to the egg whites and whip until stiff peaks form, about 3-5 minutes.
  • In a separate bowl, mix the egg yolks, cottage cheese, baking powder, salt, and optional seasonings until smooth.
  • Gently fold the cottage cheese mixture into the whipped egg whites until mostly combined.

Baking

  • Preheat oven to 300°F (150°C) and line a baking sheet with parchment paper.
  • Scoop the batter onto the prepared baking sheet, leaving space between each mound.
  • Bake for 25-30 minutes or until lightly golden and firm to the touch.

Notes

Let the cloud bread cool on the baking sheet for a few minutes before moving them. Room temperature eggs are best for whipping. Don't skip the cream of tartar.
