For the Sausage Mix:

  • 1 lb ground pork or turkey/chicken for a leaner option
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp dried sage
  • ½ tsp dried thyme
  • ¼ tsp ground nutmeg
  • ¼ tsp red pepper flakes optional, for heat
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 1 tbsp maple syrup or brown sugar optional, for sweetness
  • 2 tbsp cold water for moisture

Instructions
 

Step 1: Prepare the Sausage Mix

  • In a large bowl, combine all the seasonings and maple syrup (if using).
  • Add the ground pork (or chosen meat) and mix gently with your hands until the spices are evenly distributed. Avoid overmixing to maintain a tender texture.
  • For the best flavor, cover and refrigerate for 30 minutes to let the seasonings meld (optional).

Step 2: Shape the Sausage Patties

  • Divide the sausage mixture into 6–8 equal portions.
  • Shape each portion into a patty about 3 inches wide and ½ inch thick.

Step 3: Cook the Sausage

  • Heat a non-stick skillet or cast-iron pan over medium heat. Lightly grease with a little oil if needed.
  • Place the sausage patties in the pan, making sure not to overcrowd.
  • Cook for 4–5 minutes per side, or until golden brown and the internal temperature reaches 160°F (71°C).
  • Transfer to a paper towel-lined plate and let rest for a minute before serving.
