Ingredients
  

  • 1 quart yogurt Greek or plain
  • 1 vanilla bean
  • 1 cup dried apricots sliced thinly
  • 1 cup toasted pistachios
  • 1 cup pomegranate seeds
  • honey to serve

Instructions
 

  • Split the vanilla bean lengthwise and scrape out the seeds using the back of a knife.
  • Stir the vanilla seeds into the yogurt until evenly distributed.
  • In parfait glasses, layer dried apricots, toasted pistachios, and pomegranate seeds.
  • Add a generous layer of vanilla yogurt. Repeat the layers once more.
  • Top with extra fruit, nuts, and a drizzle of honey. Serve chilled.

Notes

You can substitute fresh fruits like berries or mango, or even add granola for crunch. Vanilla bean paste can be used instead of a whole vanilla bean for a quicker prep.
