Ingredients
  

Base Ingredients:

  • 4 medium fresh tomatoes chopped (or 1 can, 14 oz, diced tomatoes)
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 cup vegetable or chicken broth
  • Salt & black pepper to taste

Optional Additions for Flavor:

  • 2 tbsp heavy cream for a richer, creamier texture
  • ½ tsp smoked paprika for a smoky depth
  • ½ tsp red pepper flakes for a spicy kick
  • 1 tbsp grated Parmesan cheese for a cheesy finish
  • 1 tbsp fresh basil or parsley chopped (for a fresh herbaceous touch)

Instructions
 

  • Step 1: Prep the Ingredients
  • If using fresh tomatoes, chop them into small pieces. If using canned tomatoes, have them ready to pour.
  • Finely chop the onion and mince the garlic. Gather all other ingredients.
  • Step 2: Cook the Roux & Aromatics
  • In a medium saucepan, melt butter over medium heat.
  • Add flour, whisking constantly to create a smooth roux. Cook for 1–2 minutes until it turns golden and fragrant.
  • Step 3: Build the Base Flavor
  • Stir in the chopped onions, cooking until softened (about 2 minutes).
  • Add minced garlic, stirring for 30 seconds until aromatic.
  • Step 4: Add Tomatoes & Simmer
  • Pour in the chopped or canned tomatoes, stirring well. Cook for 5 minutes, allowing the tomatoes to break down.
  • Slowly add broth, whisking to combine. Simmer for 10 minutes, stirring occasionally.
  • Step 5: Adjust Consistency & Seasonings
  • If using, stir in heavy cream for added richness. Adjust thickness by adding more broth if needed.
  • Season with salt & pepper to taste. Add smoked paprika, red pepper flakes, Parmesan, or fresh herbs for extra flavor.
