- 2 tbsp olive oil
- 2 cloves garlic minced
- 1 tsp dried oregano
- 1 tsp paprika
- ½ tsp salt
- ½ tsp black pepper
- Juice of ½ lemon
For the Bowl Base:
- 2 cups cooked rice quinoa, or orzo
- 1 tbsp olive oil
- ½ tsp salt
Fresh Vegetables:
- 1 cup cherry tomatoes halved
- ½ cucumber diced
- ¼ red onion thinly sliced
- ¼ cup Kalamata olives optional
- ¼ cup feta cheese crumbled
For the Tzatziki Sauce:
- 1 cup Greek yogurt plain, full-fat recommended
- ½ cucumber grated and drained
- 1 clove garlic minced
- 1 tbsp olive oil
- 1 tbsp lemon juice
- 1 tbsp fresh dill chopped
- ½ tsp salt
Optional Garnishes:
- Fresh parsley
- Lemon wedges
- Warm pita bread
Step 1: Marinate the Protein
In a bowl, mix olive oil, garlic, oregano, paprika, salt, pepper, and lemon juice.
