Ingredients
  

For the Protein:

  • 1 lb lamb chicken, or beef (or tofu for vegetarian)
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tsp dried oregano
  • 1 tsp paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • Juice of ½ lemon

For the Bowl Base:

  • 2 cups cooked rice quinoa, or orzo
  • 1 tbsp olive oil
  • ½ tsp salt

Fresh Vegetables:

  • 1 cup cherry tomatoes halved
  • ½ cucumber diced
  • ¼ red onion thinly sliced
  • ¼ cup Kalamata olives optional
  • ¼ cup feta cheese crumbled

For the Tzatziki Sauce:

  • 1 cup Greek yogurt plain, full-fat recommended
  • ½ cucumber grated and drained
  • 1 clove garlic minced
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tbsp fresh dill chopped
  • ½ tsp salt

Optional Garnishes:

  • Fresh parsley
  • Lemon wedges
  • Warm pita bread

Instructions
 

Step 1: Marinate the Protein

  • In a bowl, mix olive oil, garlic, oregano, paprika, salt, pepper, and lemon juice.
  • Coat the lamb, chicken, beef, or tofu with the marinade.
  • Let it marinate for at least 30 minutes (or overnight for deeper flavor).

Step 2: Cook the Protein

  • Heat a pan or grill over medium heat.
  • Cook the marinated meat or tofu for about 4-5 minutes per side (or until fully cooked).
  • Remove from heat and let rest before slicing.

Step 3: Prepare the Base

  • Cook rice, quinoa, or orzo according to package instructions.
  • Stir in olive oil and salt for added flavor.

Step 4: Make the Tzatziki Sauce

  • Grate the cucumber and squeeze out excess water.
  • In a bowl, mix Greek yogurt, grated cucumber, garlic, olive oil, lemon juice, dill, and salt.
  • Chill until ready to serve.

  • Start with the grain base.
  • Add fresh veggies and sliced protein.
