Ingredients
  

Main Ingredients

  • 2 cups grilled or shredded chicken
  • 1 carrot julienned
  • 1 cucumber julienned
  • 1 cup shredded cabbage or lettuce
  • 4 tortilla wraps or lettuce leaves

Peanut Sauce

  • 1/3 cup creamy peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp lime juice or rice vinegar
  • 1 tsp grated ginger
  • 1 clove garlic minced
  • 1 tsp honey or brown sugar
  • 1 tsp sriracha or chili flakes optional
  • water to adjust consistency

Optional Garnishes

  • crushed peanuts
  • fresh cilantro or Thai basil
  • lime wedges

Instructions
 

  • Whisk together the peanut butter, soy sauce, lime juice, ginger, garlic, honey, and sriracha. Add water gradually until desired consistency is reached.
  • Julienne the carrot and cucumber. Prepare the lettuce or cabbage by shredding.
  • Warm the tortilla wraps or prepare lettuce leaves if using as the wrap base.
  • Spread some peanut sauce on each wrap. Layer with vegetables and chicken.
  • Drizzle with more peanut sauce and add garnishes if desired. Roll the wrap tightly.
  • Serve immediately or store in the fridge for later.

Notes

Customize with different vegetables, herbs, or protein alternatives like tofu or chickpeas. To keep wraps from getting soggy, store sauce and wet veggies separately until ready to eat.
