  • 2 celery stalks chopped
  • 4 cups low-sodium chicken broth
  • 1 cup diced tomatoes canned or fresh (optional)
  • 2 tbsp olive oil

  • 1 tsp salt adjust to taste
  • ½ tsp black pepper
  • 1 tsp paprika
  • 1 –2 bay leaves
  • ½ tsp dried thyme or 2 sprigs fresh thyme
  • ½ tsp cumin optional for added depth

  • 1 medium potato diced (for a heartier soup)
  • ½ cup coconut milk or heavy cream for a creamy version
  • ½ tsp chili flakes for heat
  • 1 tbsp lemon juice for a fresh touch

Instructions
 

Prepare the Ingredients:

  • Dice the chicken into bite-sized pieces.
  • Chop the cabbage, onion, carrots, celery, and garlic.
  • Measure out the broth and seasonings.

Sauté the Aromatics:

  • Heat olive oil in a large pot over medium heat.
