- Rice & Broth
- 2 cups gluten-free basmati rice
- 3 cups gluten-free vegetable broth
- Vegetables & Aromatics
- 1 tablespoon olive oil
- 1 medium onion diced
- 2 garlic cloves minced
- 1 red bell pepper diced
- 1 cup diced carrots
- 1 cup peas frozen or fresh
- 1 cup diced zucchini
- Spices & Garnish
- 1 teaspoon turmeric optional, for vibrant color
- 1/2 teaspoon cumin
- Salt and pepper to taste
- Fresh parsley chopped (for garnish)
Prepare the Rice:
Rinse the basmati rice under cold water until the water runs clear.
This step helps remove any excess starch and ensures a light, fluffy texture.
Sauté the Vegetables:
In a large saucepan, heat the olive oil over medium heat.
Add the diced onion and garlic; sauté for 2–3 minutes until softened.
Stir in the red bell pepper, carrots, and zucchini. Cook for another 3–4 minutes until the vegetables begin to soften.
Add Spices & Rice:
Sprinkle in the turmeric and cumin. Stir well to combine.
Add the rinsed rice to the pan, stirring gently to coat each grain with the spices and oil.
Simmer the Pilaf:
Pour in the vegetable broth and bring the mixture to a gentle boil.
Reduce the heat to low, cover the saucepan, and let it simmer for 20 minutes.
Five minutes before the cooking time is complete, add the peas.
Finish & Serve:
Once the rice has absorbed all the broth, remove the saucepan from heat.
Fluff the rice gently with a fork.
Season with salt and pepper to taste.
Garnish with chopped fresh parsley before serving.
