  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika optional, for color

For Garnish & Flavor:

  • 1 tablespoon fresh dill chopped (plus extra for garnish)
  • 1 teaspoon lemon zest
  • 1 lemon sliced into thin rounds
  • 1 tablespoon unsalted butter optional, for extra richness

Instructions

Step 1: Preheat the Oven

  • Preheat your oven to 400°F (200°C).
  • Line a baking sheet with parchment paper or lightly grease it with olive oil.

Step 2: Prepare the Cod

  • Pat the cod fillets dry with paper towels to remove excess moisture.
  • In a small bowl, mix olive oil, lemon juice, garlic, salt, black pepper, and paprika.
  • Brush or rub this mixture evenly over both sides of each fillet.

Step 3: Assemble for Baking

  • Place the cod fillets on the prepared baking sheet.
  • Sprinkle fresh dill and lemon zest evenly over the fillets.
  • Arrange thin lemon slices on top of each fillet for added flavor and moisture.
  • If desired, place a small pat of butter on each fillet for extra richness.

Step 4: Bake to Perfection

  • Bake in the preheated oven for 12-15 minutes, or until the cod flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
  • Optional: For a lightly crispy top, broil for the last 1-2 minutes of cooking.

Step 5: Serve & Enjoy

  • Remove from the oven and let rest for 2 minutes.
  • Garnish with additional fresh dill and serve immediately with your favorite side dishes like roasted vegetables, quinoa, or a crisp salad.
